Learn how to cook Tapas with wrinkled potatoes with herb sauce (patatas arugas con mojo verde).
For 4 people:
- 600 g small potatoes
- 500 g + 1 teaspoon coarse sea salt
- 1/2 bunch of parsley
- 10 stem(s) coriander
- 2 cloves of garlic
- 1 pinch ground cumin
- 1 tbsp sherry vinegar
- 6 tbsp olive oil
Wash the potatoes thoroughly with a brush. Spread 500 g salt and potatoes evenly on a baking tray. Cook in the preheated oven (electric stove: 200 °C/ fan: 175 °C/ gas: level 3) for 30-45 minutes.
In the meantime, wash the herbs, shake dry, pluck the leaves from the stems and chop, leaving some for garnish. Peel and slice the garlic. Mix together the herbs, garlic, cumin, vinegar and oil.
Season generously with salt and pepper. Serve the mojo verde in a bowl. Arrange the potatoes on a platter and garnish with the remaining herbs.
