What is Mallorcan sobrasada?
Most people visiting Spain for the first time may not have heard of it, but sobrasada has is a typical delicacy of Mallorca and the Balearic Islands. It’s a sausage made with pork, bacon, paprika, salt, and natural spices like pepper, rosemary, thyme, and oregano. The authentic Mallorcan sobrassada does not contain any coloring, it is the paprika powder that gives it its characteristic orange-red colour. How is the sobrasada from Mallorca made?
The authentic sobrasada de Mallorca is made by mincing the meat and seasoning it with paprika, salt, pepper and selected spices. The mixture is then stuffed into natural pork casings. Finally, the sobrasada is cured. In this phase, the sausage undergoes a slow transformation consisting in the fermentation of the mass, which loses part of its initial moisture, until it acquires its typical texture and taste.
How to eat Sobrasada from Mallorca?
Although the sobrasada looks like a sausage, similar to chorizo, it has a much softer texture that lends itself to being spread on bread rather than sliced to cut. Sobrasada is used in countless recipes in Mallorcan cuisine, but it is most commonly served as a spread on toasted white bread, together with a soft cow’s milk cheese, such as Menorcan Mahón, or with a little honey.
